Smoked trout salad with horseradish dressing

Serves 2
Ingredients
For the salad
2 smoked trout fillets
A bag of rocket leaves or other peppery salad
100g cherry tomatoes – halved
Half a cucumber – finely sliced and cut into half moons
2 bell peppers (yellow, red and/or green) chopped
For the dressing
4 tbsp extra-virgin olive oil
2 tbsp hot horseradish sauce
1 lemon, 1/2 finely zested and juiced
Method
- Flake the salmon
- Mix with the rocket and other salad ingredients
- Whisk the dressing ingredients together
- Pour the horseradish dressing over the salad and mix well
- Serve with the remaining half lemon cut into wedges
